Salmon can be prepared in many different ways: grilled, steamed, fried, en papillote, in oven dishes, poached (bellevue), etc. Salmon is delicious in combination with pasta, endives, fennel, smoked or salted bacon, Provençal herbs, tarragon, mustard, etc. Should you thaw out salmon fillets? It all depends on the preparation. If you stew them in liquid or in the oven (microwave or traditional), there is no need to thaw them out. If you fry them in a pan, on the grill or in a deep-frying pan, you do have to thaw them out first. Otherwise the fish will sputter quite a bit during frying and you will not get a crispy crust. Pat the thawed fish dry before you fry it. Despite careful filleting a bone may have been left in the fish inadvertently.
